After 13 years of continuous experimentation, Zervas Winery comes to the fore, to highlight the dynamics of the Asproudi grape variety. Around a gravity winery built on the banks of the Kalamas river (arch. Thyamis), Giorgos Zervas has planted his vineyards and makes wine from the Asproudi, Malagouzia, Vertzami, Mavroudi and Syrah varieties, revealing the greatness of Thesprotia Land with a combination of traditional and new age winemaking techniques.
The vineyards are directly affected by the continuous breeze of Kalama river that cools them day and night, from the mountain range of Mοurgana and Mount Dοulka, creating grapes with excellent maturity and a dense concentration of flavors and aromas that primarily highlight the fruit of the variety.

Each wine in our collection is a boutique vinification with strict diligence and care. The bottling of the wines is done by hand one by one each bottle.

OUR COLLECTION:
ESSENTIAL WINES YADES: Inspired by the constellation of Yades stars, a series of wines was created from a single varietal asproudi, a rosé from Syrah, and a red blend of Syrah-Vertzami grapes.

They express the typicality of the varieties in a plan of balance of flavors.

PREMIUM WINES: Single origin wines where the clay composition of the soil is fully reflected.
Asproudi Cuvee: Aged for three months in a micro oxygenation tank and then reductive aging in the bottle for other four months.
Thiamis: A fresh, explosive, tropical asproudi.
Terra Argilla: A different malagouzia, lively, mineral with a strong citric character.

NATURAL WINES: Wines with almost zero human affection.
Asproudi Orange: The greatness of asproudi variety and its more natural version from late harvest grapes.
Red Fresh: Vertzami-Syrah they create the ''new'', a fresh red, perhaps the first red of the year to be bottled in Greece.
